مطالعه خصوصیات فیزیکی، شیمیایی و میکروبی شیر الاغ؛ یک نوشیدنی فراسودمند

چکیده

شیر یک ماده ضروری برای رشد و جزء رژیم غذایی است؛ همچنین سهم عمده‌ای در تغذیه روزانه زندگی انسان دارد. مصرف شیر الاغ به عنوان یک ماده نوشیدنی فراسودمند توسط محققین مختلف توصیه می‌شود و استفاده از آن در اکثر نقاط جهان ﺑﻪ دﻟﯿﻞﺧﻮاص ﺗﻐﺬﯾﻪای و ﻓﻘﺪان پروتئین‌های آﻟـﺮژی‌زا در ﺣـﺎل اﻓـﺰاﯾﺶ است. ترکیبات تشکیل‌دهنده شیر گونه‌های مختلف به دلیل عوامل ژنتیکی، فیزیولوژی و تغذیه‌ای و شرایط محیطی با یکدیگر اختلاف دارند. شیر الاغ در مقایسه با شیر گاو حاوی مقادیر کمتر پروتئین و چربی و مقادیر بیشتر لاکتوز است و از این رو به راحتی قابل هضم و غنی از مواد مغذی است. این تحقیق با هدف بررسی خصوصیات فیزیکی، شیمیایی و میکروبی شیر الاغ به منظور پی بردن به کیفیت آن انجام گردید. در این مطالعه نمونه‌های شیر الاغ از نظر آزمون‌های فیزیکی و شیمیایی نظیر ماده خشک، خاکستر، چربی به روش ژربر، پروتئین به روش ماکرو کلدال، قند لاکتوز به روش لین- آینون، وزن مخصوص و pH و شمارش کلی باکتریایی مورد ارزیابی قرار گرفتند. بر اساس نتایج به دست آمده از پارامترهای شیمیایی، شیر الاغ از نظر میزان لاکتوز غنی و از نظر میزان چربی و پروتئین فقیر بود. همچنین بار میکروبی شیرهای مورد مطالعه مطابق استاندارد جهانی و ارزیابی نمونه‌ها از لحاظ پارامترهای فیزیکی، کیفیت قابل قبولی داشتند. در نتیجه استفاده از شیر الاغ به علت مشابهت ویژگی‌های فیزیکی و شیمیایی آن با شیر انسان، داشتن کیفیت میکروبی مناسب و همچنین خواص درمانی، به عنوان یک نوشیدنی فراسودمند توصیه می‌گردد.
